Kosher - Sweet Cornbread (Fresh Milled Flour)

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup (128g) fresh milled hard white wheat All-Purpose Flour works as well
  • 2/3 cup sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/3 cup melted butter + 4 Tbsp. to grease cast iron if that is your choice of baking equipment.
  • 1 egg

Instructions

  • Preheat the oven to 400 degrees F. Lightly grease a 9-inch round cake pan. I prefer using a big cast iron skillet. (Allow the cast iron to preheat with the oven.)
  • Run 128g of whole wheat berries through your grain mill to give you 1 cup of fresh milled flour.
  • Whisk together dry ingredients; fresh milled flour (all-purpose works too), cornmeal, sugar, baking powder, and salt in a large bowl.
  • Add milk, melted butter, and egg; whisk until well combined.
  • Pour batter into the prepared pan. If you're using cast iron, grease well with 4 Tbsp. of butter once skillet is hot and then pour in mixture.
  • Bake in the preheated oven until a toothpick inserted into the center of the pan comes out clean, 20 to 25 minutes.
  • Slice and enjoy! Maybe try it with butter or a drizzle of honey on top!
