Preheat the oven to 400 degrees F. Lightly grease a 9-inch round cake pan. I prefer using a big cast iron skillet. (Allow the cast iron to preheat with the oven.)
Run 128g of whole wheat berries through your grain mill to give you 1 cup of fresh milled flour.
Whisk together dry ingredients; fresh milled flour (all-purpose works too), cornmeal, sugar, baking powder, and salt in a large bowl.
Add milk, melted butter, and egg; whisk until well combined.
Pour batter into the prepared pan. If you're using cast iron, grease well with 4 Tbsp. of butter once skillet is hot and then pour in mixture.
Bake in the preheated oven until a toothpick inserted into the center of the pan comes out clean, 20 to 25 minutes.
Slice and enjoy! Maybe try it with butter or a drizzle of honey on top!
