Cornbread that Melts in Your Mouth – Kosher Recipe

Our family enjoys our freshly ground cornmeal from Spring Mill State Park. It’s always a fun day when we go to collect our cornmeal. 

The mill was originally constructed in 1817 and was used to grind corn, wheat, and rye until it was closed in the 1890s. It wasn’t until 1930 that the State of Indiana began the process of restoring the mill to its original condition. Today, visitors can take guided tours of the mill, watch as the water-powered turbines turn the grinding stones, and even purchase bags of freshly ground flour to take home.

Our family recently received a Nutrimill Harvest Grain Mill. This recipe is one that we’ve been using for a while. I simply adjusted it to work for fresh milled flour and or all-purpose flour. 

Fresh ground flour offers numerous benefits that enhance both nutrition and flavor. Unlike store-bought flour, which can sit on shelves for months, freshly milled flour retains more of its natural nutrients, including vitamins, minerals, and healthy fats, which can diminish over time. The grinding process also releases essential oils and flavors, resulting in a richer taste in baked goods. Additionally, fresh flour often contains a higher amount of fiber, promoting better digestion and overall health. By milling your own flour, you can also experiment with different grains, unlocking a world of unique flavors and textures, making it an excellent choice for both home bakers and health-conscious consumers.

Kosher – Sweet Cornbread (Fresh Milled Flour)

Servings 12 slices

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup (128g) fresh milled hard white wheat All-Purpose Flour works as well
  • 2/3 cup sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/3 cup melted butter + 4 Tbsp. to grease cast iron if that is your choice of baking equipment.
  • 1 egg

Instructions

  • Preheat the oven to 400 degrees F. Lightly grease a 9-inch round cake pan. I prefer using a big cast iron skillet. (Allow the cast iron to preheat with the oven.)
  • Run 128g of whole wheat berries through your grain mill to give you 1 cup of fresh milled flour.
  • Whisk together dry ingredients; fresh milled flour (all-purpose works too), cornmeal, sugar, baking powder, and salt in a large bowl.
  • Add milk, melted butter, and egg; whisk until well combined.
  • Pour batter into the prepared pan. If you're using cast iron, grease well with 4 Tbsp. of butter once skillet is hot and then pour in mixture.
  • Bake in the preheated oven until a toothpick inserted into the center of the pan comes out clean, 20 to 25 minutes.
  • Slice and enjoy! Maybe try it with butter or a drizzle of honey on top!
